This extra superieure Swiss absinthe is a clear 'La Bleue' with a smooth texture and delicate anise and herb flavour that lingers elegantly on the palate. It is best enjoyed by slowly adding three to four parts iced water creating a swirl of opalescent colour finishing with a beautiful milky white texture and releasing an array of intense aromas. Its perfect balance means that, as is Swiss tradition, sugar is not needed. La Fee XS Suisse is produced in the small town of Couvet in the Val-de-Travers region of Switzerland and it is here absinthe production began in 1792. Time was spent creating a recipe to reflect those top quality absinthes of the nineteenth century and the whole distillation process is carried out by hand and monitored closely to ensure consistency throughout. The finest aromatic plants, including locally grown wormwood (Artemesia absinthium), along with a grape alcohol base are carefully distilled in small quantities creating an absinthe that is highly elegant and perfectly balanced. Each distillation takes place in small copper stills that have the capacity to produce just over 100 bottles. The wine alcohol, herbs and plants, including the wormwood are soaked in the stills overnight resulting in a beautifully scented mixture. Just before the distillation process begins, natural spring water straight from the Swiss mountains of the Val-de-Travers region is added to reduce the alcohol levels. For many hours the stills gently extract the distillate, too fast or slow would alter the flavour dramatically. The distilled XS is now at 76% abv and is left to mature, after which purified natural spring water is added to reduce its alcohol level to 53%. Originally top quality absinthe was made using a wine alcohol base, after years of research La Fee teamed up with two of the most highly regarded distillers in France and Switzerland to produce two new and exciting absinthes; La Fee Extra Superieure. This X.S collection consists of two premier wine based absinthes that are hand crafted using original recipes and methods.

Created with the passion and expertise of founder Bepi, using only the freshest premium grape varieties carefully selected by the Tosolini family, is this prestigious collection of distillates for true connoisseurs. Most, the company's flagship product, is obtained from the fermentation of the must of de-stemmed and pressed grapes in ash barrels. According to family tradition, this best preserves the delicate organoleptic characteristics of the distillate, particularly its limpid appearance and white transparency. Distillation takes place in discontinuous, manually-operated copper stills, using a method pioneered by Bepi Tosolini over 50 years ago to guarantee persistency in the aromas and flavours of the harvest. The result is an acquavite (eau de vie) of delicate bouquet, fragrant and persistent on the palate with a dry finish. The grape varieties used in this collection are truly unique: the rare Picolit (characteristic of the Friuli region), the Ribolla gialla, the Ramandolo, the Fragolino, the Moscato Rosa and, exclusively for the Serie Storica collection , the Ribolla nera. Each distillate is proposed in elegant blown-glass bottles, which emphasize the crystalline appearance that characterizes Bepi Tosolini distillates. Finish: Gentle heat with cooked plums and oranges. The agave takes 10 years to reach maturity and there are therefore only ten harvests per century. Each huge agave plant weighs 50 kilos (100 pounds) on average and 10 kilos (20 pounds) of agave are required to produce just one litre of agave spirit. By contrast, sugar cane, barley and grapes can be harvested at least once a year making rum, whisky and brandy rather less expensive to produce. At Destileria Porfidio, they steam-cook the agave plants for at least 24 hours. Once the cooking cycle is complete, the softened agave fibre has to be pressed to separate the agave juices from the agave fibre. Press: As with ultra-premium olive oil, only the first pressing of the agave fibre is used for the production of Porfidio spirits. In addition, Porfidio does not dilute the freshly squeezed agave juice during the pressing process as some manufacturers would, as this would reduce the quality of the agave juice. The agave juice derived from mature agave plants contains natural agave sugar, which is the basis for the subsequent fermentation process. The agave juice is brownish in colour and similar to coffee in appearance. The agave juice is fermented by introducing micro-organisms, or good bacteria, which convert the sugar into alcohol. Bad bacteria would turn the agave juices into vinegar. The fermented agave juice has an alcoholic content of only 12% abv. Destileria Porfidio is the only factory in Mexico which implements quality fermentation in a rigorously controlled and therefore ideal environment. The fermented agave juice is distilled three times, in traditional alambic pots, separating the heads and the tails at each distillation and only keeping the heart of each distillate. Plata Triple-Distilled at 45% alcohol by volume is also the starting point for the ageing process which will over time produce Porfidio Anejo Single-Barrel. Prior to bottling, Porfidio Plata is adjusted to exactly 38% alcohol by volume.
