Limited stock. Colour: White crystal. Nose: Spicy, smoky, hint of caramelised vegetables. Palate: Rich palate with undertones of vanilla, cinnamon and gentle honey. Finish: Gentle heat with cooked plums and oranges. The agave takes 10 years to reach maturity and there are therefore only ten harvests per century. Each huge agave plant weighs 50 kilos (100 pounds) on average and 10 kilos (20 pounds) of agave are required to produce just one litre of agave spirit. By contrast, sugar cane, barley and grapes can be harvested at least once a year making rum, whisky and brandy rather less expensive to produce. At Destileria Porfidio, they steam-cook the agave plants for at least 24 hours. Once the cooking cycle is complete, the softened agave fibre has to be pressed to separate the agave juices from the agave fibre. Press: As with ultra-premium olive oil, only the first pressing of the agave fibre is used for the production of Porfidio spirits. In addition, Porfidio does not dilute the freshly squeezed agave juice during the pressing process as some manufacturers would, as this would reduce the quality of the agave juice. The agave juice derived from mature agave plants contains natural agave sugar, which is the basis for the subsequent fermentation process. The agave juice is brownish in colour and similar to coffee in appearance. The agave juice is fermented by introducing micro-organisms, or good bacteria, which convert the sugar into alcohol. Bad bacteria would turn the agave juices into vinegar. The fermented agave juice has an alcoholic content of only 12% abv. Destileria Porfidio is the only factory in Mexico which implements quality fermentation in a rigorously controlled and therefore ideal environment. The fermented agave juice is distilled three times, in traditional alambic pots, separating the heads and the tails at each distillation and only keeping the heart of each distillate. Plata Triple-Distilled at 45% alcohol by volume is also the starting point for the ageing process which will over time produce Porfidio Anejo Single-Barrel. Prior to bottling, Porfidio Plata is adjusted to exactly 38% alcohol by volume.

Displays all the hallmarks of fine wine making in a New World cool climate. The nose is of ripe plums with some balancing hints of leaves and mint, the palate is medium to full bodied with an elegant, well structured texture anchoring its plummy, damson and slightly spicy character. This wine is polished and stylish with an open generosity that makes it very accessible. Pan fried lamb cutlets with spinach and stilton mash, roasted mediterranean vegetables with Planeta's olive oil, roasted leg of lamb with rosemary and garlic or simply a selection of cheese. Situated just 3km from the sea there is a cooling breeze which inflences the vineyard, helping to produce a cooler, longer ripening period. Diurnal temperatures are varied which helps with the aromatic quality of the wine. Grapes are hand harvested and crushed into steel to complete fermentation to dryness. Ageing is for 12 months in 25% new barrels which are mostly French. Gunnar, son of the Viking Chief, Olaf the Black, 1237 AD was the alleged founder of the Gunn Clan in Scotland. The courage, boldness and tenacity of the Vikings inspired the naming of this fine, complex and alluring red wine. A blend of the famous Bordeaux varieties Cabernet Sauvignon which is planted on well drained gravely soils, good for close knit tannins, Merlot planted on alluvial clay based soils, giving the wine its richness and Petit Verdot grown in quartz based soils contributing to the deep colour. The wine is matured in French barriques for up to 24 months and then bottle aged in our cellars for a further 12 months before release. Produced in limited quantities with the cool climate resulting in a wine that is more Bordeaux in style, with alcohols in the region of 13%, supported by beautifully balanced acids and red fruits (cherry, strawberry.

Distinctive, unique taste with a very cultured PX-influence and just enough bittersweet coffee and caramel to balance well. Well-balanced, long and nutty. Cardenal Mendoza is still made according to the unique traditions specific to Jerez de la Frontera. The grape spirit that lies at the heart of the brandy is distilled from airen grapes, which are harvested at optimum ripeness. The brandy is distilled in copper pot stills, or alquitaras, and the resultant distillate is known as holandas. The first stage in ageing Cardenal Mendoza is to run the new spirit into special 250 litre American oak casks for two years of static ageing. It is then introduced to the dynamic ageing that makes Brandy de Jerez so unique - the system of criaderas y soleras. For Mendoza this means 500 litre casks, which have previously been used for ageing pedro ximenez (PX) and old oloroso wines. The spirit is then continuously blended though the solera process for many years, until it is drawn off for bottling.
