Hayman's Old Tom Gin is a botanically-intensive and lightly sweetened style of gin that was particularly popular in the 18th Century and was the Gin of Choice in the 19th Century. In comparison to London Dry Gin, the Old Tom style delivers a more rounded taste experience with depth. The distinctive Old Tom Gin profile is the key ingredient in classic gin cocktails such as the Martinez, Tom Collins and Ramos Gin Fizz. The style of Old Tom is renowned for its botanical intensity balanced by a light sweetness, which imparts a more complex experience than other styles of gin. Nose: Hayman's Old Tom Gin has a botanically-intensive, sweet, lightly-fruity nose, with aromas of sweet digestive biscuit, almond and creamy lemon-citrus. Hints of ginger, dark chocolate, and sweet, spiced coffee, with a light herbal-spiciness from juniper and coriander, give a more rounded fragrance. Palate: A rich, soft, round mouth feel, yielding to a sweet, medium body of candied ginger, orange peel and lemon zest, with accents of violets, rose-water and anise, provide the nicely-balanced, traditional flavour of this lightly-sweetened gin style. Finish: The finish is a delicate, spiced-cake note with a touch of honey-icing. After an initial sweet, confectionery taste, hints of citrus and juniper spiciness supply a lovely, smooth taste.

Agave Sec takes inspiration from Julio Bermejo's Tommy's Margarita - a variation on a Margarita, which is made with agave nectar in place of the usual triple sec. Whilst this is fast becoming a popular cocktail choice, it lacks some of the depth of a 'classic' Margarita because the original character of the triple sec is missing and so, following lengthy experiments in Giffard's lab, the new product was created blending the winning properties of both these ingredients. Orange distillate was paired with different quantities and samples of Mexican agave syrup and the resulting product retains the classic orangey-dryness of a triple sec, but with the addition of the sweet, earthy flavour of agave. Simply, it makes the perfect Margarita. Agave syrup is 90% fructose, which has a very low glycemic index - this not only means that its a much healthier alternative to cane sugar, but you need far less to achieve the same level of sweetness. Agave is good for you! Co-created by Bruno Giffard (Giffard Sirops & Liqueurs), Simon Difford (diffordsguide) and Nick Gillett (Mangrove); Agave Sec is the first ever triple sec liqueur sweetened with Mexican Agave syrup. A zesty orange nose with hints of both mandarin and clementine and honeyed, earthy notes. On the palate this very dry liqueur has a wonderfully silky mouth feel with bursts of both cooked orange and also fresh orange skin. The high alcohol strength adds a hint of pepper spice and the warm orangey finish is dominated by rich honey and spiced cloves.
